Canning Food for Hard Times
Mama use to can fruits and vegetables. She did it for hard times. It seemed to be a lot of hard work to me. She would clean the jars, and she would can vegetables from the garden and fruit from the trees. It seemed that mama would do it every year. She made homemade jelly. It was smooth as honey, and it tasted better than Welch’s Jelly. To me, mama was the best cook in the world. Everybody loved her cooking and canned goods.
When mama canned the food in jars, I can remember the jar lids popping. She would tell me that the jars were ceiling up. Mama made some shelves in a little room down in the garage for them. She had plans to store and store and store. Mama had big jars and little jars of canned cinnamon pears, apples, pickles, and jelly. Sometimes, I feel so sad because I miss what she did.
